Mediterranean Baked Fish

1 large onion, chopped
1 clove garlic, crushed
4 large carrots, chopped
2 pounds tomatoes
1/2 each green, red, and yellow bell pepper, seeded and chopped
1/4-1/2 cup olive or vegetable oil
1 teaspoon leaf oregano
1/2 teaspoon rosemary
1 teaspoon salt
1/2 teaspoon pepper
1 cup red wine
1/2 cup water
4 each 6-8 oz. portions fish (roughey, cod, or any white fish)
1/2 cup chopped parsley

Saute onion and garlic in oil until tender. Add tomatoes, peppers, seasonings, wine, and water. Simmer until thick. Cool and pour over fish before baking.

Sprinkle fish with salt and pepper. Spray bottom of pan and arrange in baking dish. Spoon sauce over fish and bake at 350 degrees for approximately 25 minutes or until fish flakes when tested with a fork. Sprinkle parsley over fish before serving.

Vegetables can be adjusted to personal preference.

Serve with a side salad, rolls, butter, and a nice white wine.
